A very healthy fish fillet made with canola oil.

Huachinango al Ajillo

  1. Canola spray
  2. 2 Spoons of canola oil
  3. ground black pepper
  4. salt
  5. 2 Limes
  6. 2 Chile Guajillos
  7. 2 Cloves of Garlic
  8. Half a cup of flour
  9. 720 grans of Huachinango (Red Snapper) Fillet
  1. De-vain the chiles guajillo, take out the seeds, stem and cut into thin strips.
  2. Finely dice the garlic.
  3. Mix lemon juice and minced garlic in a bowl, season with salt and pepper.
  4. Add the Huachinango fillets and let marinate at least 10 minutes.
  5. Put flour in a bowl and cover the fillets on both sides, shake to get rid of any excess
  6. Heat the oil and fry the fillets on both sides until golden.
  7. Set aside.
  8. Spray a pan with cooking spray, roast the slices of Chile Guajillo taking care to not burn them.
  9. Serve the fillets with the chile guajillo and white rice.
